Garlic scapes

Garlic scapes (flowers) are a unique offering not found at the grocery store. When hardneck garlic varieties begin to mature, they send up a scape as part of their natural growth progression. These tender stems and flowers have a mild garlic flavour and are great to eat in many different ways. Home-made garlic scape pesto, sautéed in a stir-fry or lightly grilled on the BBQ are just a few ideas. However, garlic scape season doesn't last long - often just a few weeks in June - so don't miss out.
